  • The U.S. Poultry industry needs to get 750 million birds onto store shelves monthly to keep up with demand.

  • Why is it cheaper to buy whole chicken instead of quarters?
    Because it is more work for processors to break down the whole chicken, the less it must be processed, the cheaper the price will be.  If you buy a whole chicken and cut it up yourself, you will pay much less than if you purchased individual pieces.
  • Why is chicken so tasty?
    Primarily because of the fat.  Fat carries flavor and does so in multiple ways.  First, it allows food to cook without diluting the flavor due to evaporation.  Second, it takes that flavor to all parts of the food it is cooking.
  • Why is chicken healthier than pork?
    Chicken is much healthier in terms of its caloric value and the amount of protein it has in a serving.  Pork and beef are heavy on the stomach and have lots of fat.  It is best to have some beef or pork if you are not bulking up, but comparatively, chicken is easier to digest among the three and has lots of protein.

If you have noticed that eggs are more expensive at the supermarket, you are not alone, and it is not just the usual grocery inflation that you see in other aisles at the store.  The USDA has confirmed that the avian flu is spreading among many birds in the United States, infecting backyard and commercial chickens and turkeys.
Commercial layer chickens in Iowa, Maryland, South Dakota, and Wisconsin have been affected.  The state with the most endangered layer chickens is Iowa, which produces the most eggs in the U.S.  Backyard chickens in 19 states, from Maine to Nebraska, have also come down with the virus.  Millions of poultry birds have died because they succumbed to the flu or were killed to prevent it from spreading further.  Commercial flocks most likely caught the virus from wild birds, who have also tested positive for the virus.

Inflation and increased feed prices due to the war in Ukraine are two other reasons for the price increases.  As the outbreak continues, further depopulation could compound the problem.
